RESTAURANTS MANAGER
Le Graal Cortina is a prestigious 5-star luxury annual hotel, already belonging to Leading Hotel of the World, opening soon in Cortina d’Ampezzo — a world-class destination in the Dolomites. Dedicated to excellence, creativity, and unforgettable guest experiences, our culinary philosophy blends local Alpine traditions with refined international cuisine.
As a key figure in our opening Hotel, already belonging to The Leading Hotels of the World, our Restaurants Manager manages and oversees the daily operations of the Hotel’s outlets. With a passion for service and constant attention to details, this role helps ensure that every guest’s experience is seamless, elegant and unforgettable. Our Restaurants Manager plays a hands-on role in team building, service coordination, training and guest interaction, contributing to the excellence and reputation of the restaurant and the hotel overall.
Key Responsibilities
• Manage from the pre-opening all aspects of restaurants and room service operations, ensuring a smooth and efficient service during all shifts.
• Train, lead and supervise the service team, ensuring alignment with LQA standards and a guest-centric approach.
• Manage the Sommellerie, staff scheduling, daily briefings and team development, fostering a positive and high-performing environment.
• Monitor guest satisfaction, respond promptly to feedback or concerns, and ensure follow-up actions.
• Collaborate with the kitchen team to ensure seamless coordination between service and culinary delivery.
• Contribute to the creation of memorable dining experiences through personalized attention and elegant interaction.
• Ensure compliance with health and safety regulations, hygiene standards and internal policies.
• Support inventory management, cost control and ordering processes.
• Participate and giving constant contributes in training programs, performance reviews and staff onboarding, also leading by example.
• Promote a culture of excellence, discretion and continuous improvement within the team and synergically collaborating with the other HODs.
Prerequisites
• Degree or diploma in Hospitality Management or related field.
• Previous experience (minimum 2–3 years) in a Restaurant manager role within upscale or fine dining restaurants, preferably in luxury hotels adopting LQA and/or Forbes standards.
• Strong leadership, communication and team-building skills.
• Excellent knowledge of service techniques, food and wine pairing and luxury hospitality etiquette.
• Fluency in Italian and English is required; additional languages are a plus.
• Confidence in using restaurant POS systems and Microsoft Office tools.
• Customer-oriented attitude, with impeccable presentation and a refined sense of hospitality.
• Flexibility to work evenings, weekends, and holidays as needed.
• Legal right to work in Italy.
Job contract and Benefits
• Direct job contract with our annual Hotel in compliance with CCNL Turismo Confcommercio (H052),
• Competitive gross annual salary (40.000 € / 45.000 € as RAL) and benefits:
