Sous Chef
Le Graal Cortina is a prestigious 5-star luxury annual hotel, already belonging to Leading Hotel of the World, opening soon in Cortina d’Ampezzo — a world-class destination in the Dolomites. Dedicated to excellence, creativity, and unforgettable guest experiences, our culinary philosophy blends local Alpine traditions with refined international cuisine.
We are seeking experienced and passionate Sous Chefs to join our culinary leadership team. Our Sous Chefs will support the Executive Chef in delivering exceptional food quality across all hotel outlets, driving innovation while maintaining operational excellence for the 2 kitchens. The ideal candidate will be a team player with strong leadership skills, impeccable standards and a deep commitment to luxury hospitality.
Key Responsibilities
- Assist the Executive Chef in planning, organizing and directing all kitchen operations.
- Onboard, supervise and motivate kitchen staff, ensuring a high level of performance and professionalism.
- Maintain exceptional standards for food preparation, presentation, and consistency.
- Support menu development, incorporating seasonal and locally sourced ingredients.
- Monitor kitchen costs, control food waste, and optimize profitability.
- Ensure compliance with health, safety, and hygiene regulations (HACCP or equivalent).
- Collaborate with F&B management to deliver seamless guest experiences across all dining venues.
- Train and develop junior kitchen team members.
- Step in for the Executive Chef when required and effectively manage kitchen operations during service.
Prerequisites
- Proven experience as a Sous Chef or similar role in luxury hotels, fine dining restaurants or Michelin-starred kitchens.
- Culinary degree or equivalent professional qualification preferred.
- Strong leadership and team management skills.
- Excellent understanding of contemporary cuisine and global culinary trends.
- Ability to perform in a high-pressure, fast-paced environment.
- Exceptional organizational and communication skills.
- Strong attention to details and accuracy.
- Excellent organizational and time management skills.
- Mandatory integrity, confidentiality and a problem-solving mindset.
- Legal right to work in Italy.
Job contract and Benefits
· Direct job contract with the Hotel in compliance with CCNL Turismo Confcommercio (H052),
· Competitive gross annual salary (37.000 € / 40.000 € as RAL) and benefits:
