Job Description

As Executive Chef, you are fully responsible for developing the reputation of the hotel and Food and Beverage Outlets such as Roberto’s Restaurant, Half Moon Lounge Bar, Espresso Bar Issimo, the Executive Lounge and for the Banqueting Department by the production of excellent quality food. The Executive Chef is also responsible for a high quality kitchen brigade and will oversee the operational management of the kitchen. Specifically, an Executive Chef will perform the following tasks to the highest standards:

•Responsible for ensuring that the weekly/monthly working schedules are made and maintained in accordance with local legislation
•Ensuring adequate resources are available according to business needs
•Ensure the consistent production of high quality food through all hotel food outlets
•Regular review of all menus with Food and Beverage Manager to confirm offerings are in line with market trends
•Identify an effective approach to succession planning
•Manage department operations, including budgeting, forecasting, resource planning, and waste management
•Ensure full compliance to quality assurance requirements
•Ensure monthly communication meetings are conducted and post-meeting minutes generated
•Manage all aspects of the kitchen including operational, quality and administrative
•Create menus that meet and exceed customers' needs with smart approach to costing and revenue management
•Ensure team members have an up-to-date knowledge of menu items, special promotions, functions and events

What are we looking for?

An Executive Chef of Hilton Amsterdam is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:

•Previous, relevant experience as an Executive Chef or a high-performing Sous Chef in a first class property, required
•High volume banqueting experience is required
•Knowledge of various cooking styles and techniques
•Excellent coaching skills and willingness to challenge and grow the team
•Collaboration and team work are key to success
•Knowledge of Italian kitchen is preferred
•Excellent communication and leadership skills
•A creative approach to the production of high quality food
•A business focused approach to managing a hotel kitchen
•Ability to build relationships, internal and external, to the hotel and the Company
•Excellent planning and organizational skills
•Ability to multi-task and meet deadlines
•Proficiency with computers and computer programs

Candidates will be asked to conduct on-line assessments, face to face interview and cooking demonstration.
